Farmer’s Cheese Strudel with Blueberries

Ingredients

1 cup all-purpose flour
1 cup Wondra instant flour
4 Tbs unsalted butter, melted
3 egg yolks
2 Tbs heavy whipping cream
2 cups of blueberries
1 1/4 cup farmer’s cheese (or Queso Fresco)
1 1/4 cup milk, lukewarm
1 packet active dry yeast
1/2 cup and 1 Tbs sugar
1 box vanilla pudding
salt to taste

Instructions

Preheat oven to 350°F. Add lukewarm milk, 1 Tbs sugar, and the active dry yeast into a cup and let bloom for approximately 10 minutes. In a large mixing bowl, add both flours, a pinch of salt, two of the egg yolks, and the butter. Add the yeast when proved and mix well. Cover the dough and let rise.

Mix the farmer’s cheese with the 1/2 cup of sugar, vanilla pudding powder, cream, and remaining egg yolk. Gently fold in blueberries. Divide the well-risen dough into two parts. Roll out each section into a rectangle about 1/4 inch thick, brush with melted butter, and spread the filling on in the center. Carefully fold the dough into thirds lengthwise and press the edges. Brush the outside with butter, place on a lined baking sheet, and bake for about 40 minutes.
