Potato Soup with Mushrooms

Potato soup is favorite soup in the Czech Republic. It is a healthy, thick cream soup with potatoes and mushrooms. It tastes delicious! It is also traditional soup and it is handed down from generation to generation. Many people cooked this soup for lunch in the past for their families.

Ingredients

1/2 cup dried or 1 cup fresh Portobello mushrooms
3 potatoes
1 carrot peeled and diced
2 celery stalks thinly sliced
chopped parsley for garnish
1 small onion peeled and sliced
1/2 tsp marjoram
salt and ground black pepper to taste

Butter roux
1 Tbs butter
4 Tbs all-purpose flour

Instructions

Soak dried mushrooms in water for a half hour. Wash peel and chop the potatoes into small cubes dice the carrot and thinly slice celery. Peel and slice onion. Put the potatoes in a kettle with a lid add the vegetables and fill with water. If you use fresh mushrooms cut them into pieces.  Then add mushrooms to the kettle, salt to taste. Cook until all is tender.
Make a roux by melting the butter and adding the flour stirring it until a light brown, do not scorch. Ladle some of the soup into this roux to make it thin enough to pour into the soup. This will thicken the soup and give it color. Cook the soup for about 5 min. Stirring it correct the salt, pepper and add the marjoram. Serve hot and garnish with a little chopped parsley.
