Czech name: Dušené hlávkové zelí

Written by Lucie Urbankova

This side dish is served as a National Czech food with dumplings and pork. It is quite laborious, especially because it is a just side dish, but it is very tasty and healthy. You can mix it with pasta and some smoked sausage and it is a tasty main dish. It can be also served with Czech dumplings or just potatoes and some meat.

Ingredients

1 head cabbage (medium size)
2 Tbs butter
1 chopped onion
1 large peeled grated raw potato
1 tsp vinegar to taste
1 tsp salt to taste
1 tsp caraway seed
2 tsp sugar
1/2 cup water

Instructions

Slice the cabbage into thin strips. In a big pot with a lid melt the butter add the onion fry for 3-5 minutes on medium heat. Then add sugar, cabbage, caraway seed, potato, and water. Cover and stew till the cabbage is soft (10-15 minutes) and stirring occasionally, add water if needed. When all cooked add the vinegar to taste. Let it boil for a minute then serve.
