Mommy’s Special Soup with Mushrooms

“Mommy’s Special Soup” comes from South Bohemia, a region with forests and fish-rich rivers, including those in and around Sumava National Park. You do not need to be a mother to make the simple recipe provided here, and you do not need to be a kid to enjoy it. It’s a nice meal to enjoy after a day of hiking or biking or hunting for carp or mushrooms (and any other time, too).

Ingredients

3/4 cup chopped carrot, celery, and parsley
1 Tbs oil or lard
1/2 cup sour cream
1 egg
3-4 Tbs flour
1 handful dried mushrooms
salt to taste
oregano to taste
green parsley

Instructions

Melt the lard in the pot and add washed and chopped vegetables. Add water, mushrooms, and salt to taste and let boil. Then it’s time to make dough from the flour and egg. Mix them together and form the dough into little bits looking like little gnocchi and put them in the boiling soup. Once the gnocchi float to the top, they are done. When this happens, add the cream, spices, and oregano to the soup and continue boiling briefly. Serve the soup garnished with parsley.
