Litomerice Stuffed Pork Roll

This is a specialty of northwest Bohemia, specifically the Usti region. The position of the Usti region is, in terms of its gradual integration into European structures, along with the close vicinity and accessibility of Prague and other regional centers, a significant factor of its development. Also, the main European roads and railway lines on the axis from Berlin to Vienna via Prague, together with the Labe waterway, go through this Region. This recipe comes from Litomerice and the surrounding area, including Terezin, Bohusovice nad Ohri, and Lovosice.

Litomerice Stuffed Pork Roll is a neat roll that conceals a hot dog with sauerkraut filling. Thanks to the sauerkraut juice, the meat becomes tender and gets a spicy sour taste. To lighten a hearty meal, serve with potatoes prepared to your liking. Lager or Pilsner beer to drink is highly recommended! This food will bring a smile to the face of the eater.

Ingredients

4 slices pork shoulder (approx 1/4 lb each slice)
4 hot dogs
1 cup sauerkraut
2 Tbs oil for frying
all-purpose flour
salt to taste
ground black pepper to taste

Instructions

Tenderize the pork shoulder slices thoroughly. Salt and pepper each slice to taste and top with sauerkraut.
Add a hot dog to each, roll it up, and fix it with toothpicks
Coat the rolls in all-purpose flour and fry rolls in oil.
Remove toothpicks from soft rolls.
Remove excess fat from the pan, cover rolls with a small amount of broth or water, and simmer.
Serve warm with boiled potatoes, mashed potatoes, potato puree, fresh or pickled vegetables.
