Czech Blueberry Dumplings

Czech fruit dumplings are very popular and something special with children and adults. Dumplings are made from potato or farmer’s cheese dough. They are filled with a variety of fruits such as peaches, blueberries, apricots, strawberries, plums and other fruit. These are an important part of traditional Czech cuisine. Dumplings are prepared differently in some Czech regions.  In some areas, they use different toppings like poppy seed or dry breadcrumbs. They are always served hot and normally sprinkled with grated farmer’s cheese, powdered sugar and melted butter.

Ingredients

Dumplings:
2 3/4 cups Wondra instant flour
1/4 tsp of salt
4 tsp granulated sugar
1 tbs yeast (1/2 cubes)
1 1/2 cup lukewarm milk
2 egg yolks
1 tbs unsalted butter
3 cups blueberries

Topping:
melted butter
farmer’s cheese (or queso fresco)
powdered sugar

Instructions

Put the yeast into a bowl, add sugar and some milk. Stir and let rise, it takes about 15 minutes. In the bowel, we add the flour with salt, pour in the yeast, and the remaining milk with the beaten egg yolks. Mix well dust with flour and let rise in a warm place until it will be doubled in size.

Put the risen dough on a lightly floured work surface. Using a rolling pin, roll out the dough until it will be 1/4 inch thick. Cut into 3 inch squares then place your fruit on the square and then fold over and form into a ball. Use all of the dough in the same way. Cover the prepared dumplings with a towel and let rise for 15 minutes.

Place the dumplings in salted boiling water or steamer. Cover them with a lid and cook for three minutes. Take off the lid, turn the dumplings in the water and cook them for another three minutes.

The exact time depends on their size. When we remove them, immediately pierce them with a fork to release the steam, pour melted butter over them, and sprinkle with farmer’s cheese and powdered sugar.
