Old Bohemian Honey Cake

It is a traditional cake for Czech culture, but there is no uniform recipe. Every family makes it in a slightly different way – the way they like it the most – some families add pudding, some add cinnamon, ….
However, the Old Bohemian Honey Cake (Medovnik) is not in fact from the Czech Republic. The origins are from the east and were brought here by immigrants. Czechs loved the cake so much it quickly spread across the country. Nowadays it is, sadly, not very common for people to make it at home. They just go and buy it. But there are still some families, that make it for Christmas every year as a very good, very tasty sweetness.

Ingredients

Pastry
1 lb all-purpose flour
1/4 lb sugar
1 egg
4 Tbs unsalted butter
2 Tbs honey
5 Tbs milk
1 tsp baking soda

Cream
1 can sweetened condensed milk
1 lb unsalted butter
1 cup extra heavy cream
1 cup icing sugar or more if necessary

Sprinkle
3 Tbs ground walnuts

Instructions

Pastry
Melt the butter in a pot, then add milk, egg, sugar, honey, and baking soda to a bowl with the flour.  Mix well. Making a homogeneous batter create 5 equal pieces and bake them in preheated oven on 350°F for 5 to 7 minutes.

Cream
Pour condensed milk into a bowl and add pieces of butter. Mix thoroughly.
Put the sour cream into a different bowl and add sugar. Blend in smooth.

Once the slices are cooled spread them with cream – first with part number 1 then number 2. Put the coated slices on top of each other, then spread the sides of the cake.  After coated, sprinkle the cake with ground walnuts. Let sit for at least 1 day, and then enjoy!
