Roast duck is a traditional Czech meal that is easy to prepare and eaten on special occasions. Even a beginner can roast a perfect duck as the secret is in slow baking. To make a delicious roasted duck, you need enough time and a few ingredients. Roast duck in the Czech Republic is usually served with Czech style potato dumplings and cooked red cabbage or sauerkraut.
5 – 7 lb whole duck
1 tsp salt
1 Tbs all-purpose flour
2 Tbs caraway seed
1 cup water
Preheat the oven to 260 – 300 F.
Clean, wash the duck and dry. Then salt the duck inside and out, sprinkle with caraway seed. Put the prepared duck into a roasting pan with a lid or cover, add water and put into the hot oven.
The duck should be roasted in about 3 1/2 to 4 hours. Test for doneness by moving the drumstick, If it separates easily the duck is done.
If you like the duck more crispy, you can set the oven to 430 F and bake it uncovered for another twenty or thirty minutes.
You can serve it with the Czech potato dumplings and cooked sauerkraut or red cabbage.
