Potato Patties with Smoked Sausage

This is one of the easiest and fastest traditional Czech dishes. It is a favorite dish for every generation and people have it for lunch, dinner or even for a snack. Although potato patties are not the healthiest dinner, it is very tasty and practical. You can make them at home and take them as a cold snack with you when you travel, or to school.

Ingredients

1/4 lb smoked sausage (Lumber Jack or Polish)
2 lb potatoes
2 cups all-purpose flour
salt and ground black pepper to taste
2 tsp marjoram
1 whole garlic head
oil or lard for frying

Instructions

Wash, peel and dry raw potatoes.  Grate them in a bowl. Drain the grated potatoes. Mince the garlic.
Then put them in a big bowl, add salt, pepper, eggs, marjoram, minced garlic and the flour.
Cut the sausage into small cubes and add that to the mixture and making a dough.

Put as much oil or lard into a pan as to fry the patties. Heat the oil.
To test if the oil is hot enough put a small piece of bread and you will see if it is ready.
Take a middle size scoop of the mixture and form it into the shape of a pancake in the pan.
Fry the mixture on both sides until it is golden brown.
Do the same with remaining dough.
You may drain patties on paper towels.
You can serve them warm alone or with soup or goulash. They are good also for snacking.
