A traditional Easter recipe in the Czech Republic.
Buns
2 cups all-purpose flour
a pinch of salt
1/2 cup granulated sugar
1 cup milk
1 sachet active dry yeast
3 egg yolks
zest of 1 lemon
1/4 cup raisins
1/2 cup melted butter
Glaze
egg yolk
1 Tbs milk
Note: can be served with honey with a splash of dark rum
Preheat the oven to 320F. In a large mixing bowl, add flour and a pinch of salt. Add sugar and pour lukewarm milk in. Add yeast, egg yolks, and grated lemon zest. Finally, pour in the melted butter and mix the dough.
Sprinkle flour over the dough, cover with a tea towel, and leave it to rise for about half an hour until the size is doubled.
Take off pieces of dough and make them into strings about 2 inches thick and about 10 inches long. Roll them up into spirals and put them on a baking tray lined with parchment paper. Leave them to rise for another 30 minutes. Glaze the spirals with the egg yolk and milk mixture and bake in the oven for 15-20 minutes. Let cool for a few minutes. While still warm, glaze with honey that can be mixed with a touch of dark rum.
