Czech Lunch Loaf

Lunch loaf is a favorite Czech meal. It is served with potatoes for dinner or between two slices of sourdough bread as a sandwich. This is an old Bohemian recipe which can be served hot or cold. Lunch Loaf are prepared by local Czech butchers already cooked and purchased cold. When served as a sandwich on rye bread with mustard and pickles a good Czech beer makes it a favorite meal. Ingredients

2 cups ground beef
2 cups ground pork
1 cup cured smoked pork meat (collar or butt)
2 slices of white bread
1 cup of milk
4 peeled crushed garlic cloves
2 scallion shoots finely chopped (including the green)
2 eggs
1 Tbs dried marjoram
ground black pepper to taste
salt to taste

Instructions

Preheat oven to 345F. Finely chop the smoked meat. Dice the slices of white bread, put them in a bowl, pour over the milk and let it soak for a while. In a larger bowl, mix the ground beef, pork, smoked meat, the soaked white bread and the rest of ingredients. Shape into a loaf and put into a greased pan. Add a few spoons of water. Bake at 345F for 1.5 hours until golden brown. Pour the juices over the loaf from time to time. Let it rest for 10 minutes before slicing. Serve with green lettuce and mashed potatoes.
