Czech Cherry Coffee Cake

The cherry coffee cake is one of the most traditional desserts in the Czech Republic. It’s a seasonal dish because cherries are not usually available in stores all year. This recipe is one of the easiest and quickest. It is ideal for Sunday breakfast or just for coffee. Cherries really make the taste of summer.

Ingredients

3 cups Wondra instant flour
1 cup crystal sugar
1/2 cup oil
1/2 cup lukewarm water
3 eggs
2 tsp vanilla sugar
2 cups pitted cherries
1/2 cup nuts
1 Tbs cinnamon sugar
2-3 tsp baking powder
unsalted butter and Wondra instant flour to grease the pan

Instructions

Preheat the oven to 300 F and grease the pan with unsalted butter and sprinkle it with the flour. Then separate egg yolks from whites and whip them with crystal sugar using a hand mixer or KitchenAid, under constant stirring add gradually the oil. Then add the flour mixed with baking powder and vanilla sugar, add the water. In another bowl whisk the whites until stiff and fold them gently into the dough. Pour the dough into the pan and put the cherries on top sprinkle the nuts and cinnamon sugar on top of that and bake for 30 minutes or until a toothpick comes out clean.
