Czech Apple Roll

The apple roll is one of the most popular deserts in the Czech Republic. Why? Because many Czech people have gardens with apple trees. And the apple roll is one of the best uses of the fruit. This traditional and delicious dessert is easy to make. Every cook usually has their own version of the recipe – with or without nuts, farmer’s cheese (or Queso Fresco), or bread crumbs.

Ingredients

2 cups all-purpose flour
6 Tbs oil
almost 1 cup water
1/4 tsp salt
1 Tbs vinegar
8 Tbs plain bread crumbs
4-5 peeled and cored apples
1 egg
sugar, cinnamon, nuts to taste

Instructions

To the flour, add salt and vinegar then oil and water. Knead the dough by hand. Add more flour if needed. Then put the dough in the fridge while preparing apples. Grate the apples or cut them into small pieces. Then divide the dough into half and roll one out (18×12 inches). Cover two-thirds with breadcrumbs, apples, cinnamon, sugar (and nuts, if you want to) and roll it up. Seal fold the ends and put the apple roll on a baking pan lined with parchment paper. Prepare the second apple roll in the same way and then brush both of them with a beaten egg wash.

Bake in a preheated at 340°F for about 30-35 minutes. Cut and serve either warm or cool.

Dust with powdered sugar or whipped cream (optional).
