Crepes Filled with Farmer’s Cheese

Czech name: Palačinky plněné tvarohem

It is a favorite food for Czech children and also for adults. It is usually served as a breakfast, lunch or dinner. We can serve it as a dessert with coffee. We can add ice cream or fruit to it, and the fillings can be various. Everybody likes something different. We can use our imagination.

Ingredients

Farmer’s cheese filling
1/2 lb farmer’s cheese (or Queso Fresco)
3 tsp powder sugar
1 plain yogurt
a pinch of salt

Crepes
1 cup all-purpose flour
2 cups milk
1 egg
pinch of salt
1 tsp sugar
oil for frying

Instructions

Whisk flour eggs milk salt, sugar until smooth. Let it rest for 30 minutes. Make the filling, mix the farmer’s cheese with yogurt, sugar, and salt. If it is too thick, add a little milk. Heat and oil a crepe or frying pan. Ladle enough of the crepe mixture to cover the pan, but not thick. Fry on both sides till it’s golden.

Serve the crepes fill with the farmer’s cheese mixture, fold and sprinkle them with powder sugar.
