Rice Pudding with Apricots

All of us have experienced being hungry and don’t have much time for cooking. Rice pudding is what you are looking for at such time. It’s quick, inexpensive and it satisfies you during your hunger. Also, it is that kind of dish that Czech children are able to cook without much help. Moreover, you can mix every kind of fruit in it. Today’s recipe contains apricots, but it depends on you what kind of fruit you like. So don’t be scared of experimenting, because in the case of rice pudding anything is possible.

Ingredients

1 1/2 cup rice
1 egg
1/4 cup powdered sugar
1/4 tsp salt
2 cups whole milk
2 cups water
1 cup of dried apricots, diced or fresh apricots (but the fresh are not as sweet as the dried ones)
1 Tbs of unsalted butter
1 zested orange
1 tsp vanilla extract
1 tsp cinnamon

Instructions

Stir the 1 1/2 cup of rice into 2 cups of boiling water. Cover, and simmer for 20 minutes on low heat.
In another saucepan, mix the cooked rice with 1 1/2 cups milk, salt and sugar.  On medium heat cook for 17 to 20 minutes until is thick. Add beaten egg,  1/2 cup milk and the apricots, stirring and cook for 3 minutes.

Take off the stove and stir in the vanilla, orange zest, cinnamon and butter.

Decorate with some apricot slices (optional).
