Czech Bread Pudding (in Czech called Zemlovka or Zemlbaba) is a traditional Czech vegetarian main dish consisting of apples and hot dog buns that are soaked in lukewarm sweetened milk. It is a very favorite meal thanks to its easy and quick preparation and is often served in public dining halls, cafeterias or school canteens.
5 big peeled /grated apples
2 1/2 cup milk
10 hot-dog buns
1 package vanilla sugar
4 eggs
1 cup farmer’s cheese (or Queso Fresco)
2 Tbs powdered sugar
1 cup dark rum
1 Tbs cinnamon
1/2 cup raisins
1 cup chopped walnuts to taste
3 Tbs unsalted butter for greasing
1 cup plain bread crumbs
Spread the roasting pan with butter and powder it with plain bread crumbs. Cut the hot-dog buns to slices and dunk it in lukewarm sweetened milk, then put the slices to the bottom of the roasting pan. Whip the farmers cheese with vanilla sugar and two eggs. Spread the whipped farmers cheese on the slices. Wash, peel and grate the apples and layer it on the farmers cheese. Powder it with vanilla sugar, raisins soaked in rum, cinnamon and grated walnuts. Make the last layer of hot-dog buns and pour the rest of sweetened milk out. Put the roasting pan into the preheated oven. In the meantime, whip two egg whites and two tablespoons of sugar. Bake it for 355 °F. After 30 minutes of baking, take it out of the oven and spread the whipped egg whites onto the hot-dog buns. Bake it until there is a golden crust.
Czech bread pudding is usually served warm but there is also possibility to eat it cold.
