Sour Lentils with Hot Dogs and Eggs

Sour lentils with hot dogs is a traditional Czech dish. It is very easy to make. In the Czech Republic, it is common to cook lentils for dinner. They are popular among students because it is simple, quick and inexpensive to make. Traditionally, people eat lentils on New Year’s Day as they ensure prosperity for the new year.

Ingredients

8 hot dogs
4 eggs
1 cup lentils
6 Tbs oil or lard
1 large diced onion
1 Tbs all-purpose flour
cold water
vinegar/lemon juice
salt and ground black pepper to taste
pickles

Instructions

Rinse and soak the lentils in water for 1-2 hours. Drain add fresh water covering them, cook them slowly till they are soft, about 20 to 25 minutes. Dice the onion and fry it in a pan with the oil or lard. Add all-purpose flour, fry it lightly then mix with the hot lentils. Add salt and vinegar/lemon juice to taste. Cook altogether, the lentils will be soft. Score the hot dogs and fry. Then fry the eggs. Add salt and pepper to taste.

Arrange the lentils, hot dogs and fried eggs on plates. You can garnish it with pickles.
