Czech Style Ham and Noodle Casserole

Noodles with ham (Sunkoflicky or Sunkofleky in Czech) is a really quick and tasty dish with little ingredients. It’s always served with either pickles, Czech cucumber salad or a tomato salad. It’s just an ordinary Czech meal usually cooked on weekdays or when there’s no time for something special. Some Czechs prefer their noodles not baked just mixed with the ham.

Ingredients

3/4 lb fully cooked smoked ham or Canadian bacon
1 lb noodles (pappardelle pasta or extra wide egg noodles)
2 Tbs oil
6 eggs
1/3 cup milk
1 chopped yellow onion
2 cloves minced garlic
salt and ground black pepper to taste
oil to grease the pan and to fry the onion
aluminum foil (optional)

Instructions

Preheat the oven to 350 F and grease the pan with oil or lard. The pappardelle pasta can be broken into smaller pieces in order to look like Czech square noodles but this step is only optional. Then cook the pasta in salted water following the instructions on the packaging and drain noodles when cooked.

Fry chopped onions until golden brown. Cut the fully cooked smoked ham into small cubes. Then mix the cooked noodles with the ham, fried onion, and oil together in the pan and the well-whisked eggs with milk, salt, and pepper into noodles.

Cover the casserole with aluminum foil (optional) and bake for about 30 minutes.
