Czech Potato Dumplings are made from boiled potatoes. Various recipes were created in the 19th Century, which have become a natural part of Czech cuisine. We eat potato dumplings sprinkled with breadcrumbs, fried onions or gravy. Potato dumplings are a suitable side dish for meat with sauerkraut or spinach.
6 boiled medium potatoes
1 egg
1 egg yolk
1/2 cup all-purpose flour
1/2 cup Semolina pasta flour
salt to taste
Mash the boiled peeled potatoes adding the egg and egg yolk, salt, semolina, and flour, mix well to make a dough. Sprinkle some flour on a work surface and knead the dough until it is not sticky. Shape into several oblong rolls about 2 inches thick. Cook in boiling salted water for about 20 to 25 minutes. During cooking, lift the dumplings from the bottom to prevent it from burning. When cooked immediately cut into slices and serve. You can use potatoes cooked the day before.
